How can I use StockCharts to tell me the standard deviation, risk, beta or volatility of a stock or ETF to assess and compare risk.

Here's a link to the Chart School article on the Standard Deviation indicator:

If that is what you want, you can add it to a chart style. Note that although the default parameter is 10 (two weeks on a daily chart), you could change that to 21 (a month), or 63 (a quarter) or whatever your time horizon.
If you have a number of stocks/ETFs you are interested in, you could add them to a list, scan for membership in that list "[favorites list is ??]" and then add "rank by [Std Deviation(x) ". The results page will be sorted by the StdDeviation value. You can then save back to the favorites list in that order.0
