How do I SCAN for Increased average volume

Lots of examples in the Scanning documentation, just look under the ChartSchool tab and go to the Technical Scanning section.
To get you started try.
[type = stock]
and [sma(3, volume) > 3 days ago sma(3, volume) ]
Yes the volume is updated throughout the day, however be aware that the volume at the open is zero and is cumulative thru the day. So early in the trading day, TODAY's 3 day average will be 2 full days and a partial day maybe only a few minutes. Thus its best to run scans which contain volume after the close, EOD.0
